With everyone’s favourite guilty pleasure ‘The Great British Bake Off’ back on our screens tonight, it inspired us to get to know our very own 99 City Road cake baking genius, Lakrisha. Our in house pastry chef would get our star baker vote every week! With Lakrisha baking our in house treats, we thought what better way to spend a Tuesday morning than following her around the kitchen tasting her bakes and getting to know her a bit better….

How long have you been baking for?

I have always loved to bake, who doesn’t love cakes! But I really got into it during my time studying professional cookery at college, after receiving my NVQ level 3 I knew I wanted to be a pastry chef. So working at 99 City Road and making this dream a reality is great, I find it surprisingly relaxing and lots of fun!

What is your favourite thing to bake?

I really enjoy making big bespoke cakes, like show stopping birthday cakes. I do these outside of work too, so I must enjoy it! I get asked to do a lot of special birthdays for people, so end up making huge creations. I also really like trying new things, that’s why working here is great as our menus are inspired from such a broad range of countries and cuisines which means I often get to try new and unusual techniques.

Is there anything you hope never makes it to 99 City Roads menus?

Obviously when baking for up to 300 people at a conference centre, anything intricate can be challenging. But we always manage to make it work. I thought 400 cupcakes would tip me over the edge but we pulled it off!

What baking trends do you see coming for events and conferences?

Unicorn food (Google it, and I guarantee you’ll be reaching for the food colouring) is the thing at the moment. Cupcakes are still in – I am forever being asked for cupcakes. But I think the biggest thing at the moment is all things bright – rainbow cakes and lots of multi coloured icing seems to be really ‘in’.

What has been your biggest baking success at 99 City Road?

My Crème Caramel went down a treat! It took a lot of trial and error but the finished product was great. Anything chocolatey is usually a success as well, I love working with it, and I’ve really perfected the art of making it look great but taste even better.

How do you manage to make such large quantities of perfect bakes?

By being organised and planning ahead. Its a cliché but practice really does make perfect. We put in a lot of work to make sure every portion looks and tastes exactly the same as the last. This involves lots of taste testing, which is the fun part!
